'Matcha & Japanese home cookig experience' is a Chado experience in Tokyo.

What's chado(The Way of Tea)?

Chado-the Way of Tea is a comprehensive, artistic culture of Japan which includes various fields of art such as calligraphy,flower arranging,ceramics,lacquer ware,cooking,textiles,and so forth.

The host decides on the theme of the tea gathering and prepares various utensils.

The most important utensil is a hanging schroll that suite the theme of tea gathering.

The guest can feel season with flower arranging and moist sweet.

What you can do in my class:

In my class you can join the tea gathering(Casual style tea ceremony)

You can make moist sweets(主菓子),and you can have the sweets which you made in the tea gathering .

Would you like to make tea with ladle at the brazier?

Chado provides you a true silence and you can also feel of Japan.

Deep fried eggplant&zucchini in Japanese broth(茄子とズッキーニの揚げびたし) with roast tomato.

Eggplant&Zucchini are not boiled but deep fried and soaked in Japanese broth.

Summer is the season when vegetables are delicious.

The rainy season(梅雨) is long in Tokyo this year.

I am worried about the delay of growing vegetables.

I want to enjoy a lot of summer vegetables this year too.

Curry is Indian food and Udon is Japanese food.

The characteristic of Japanese food culture is to take in the other culture well.

tofu pulp simmered tofu pulp with clam and shiitake mushroom.

To make Japanese fried chicken,you will need flour,spices and cooking oil.

I use sansyou-山椒 for spice.

Japanese pepper(sansyou-山椒)is a kind of spice.

The immature fruitis(mizansyou-実山椒)is boiled and kept in a freezer.

The fruit and stem are separated.

It took 1.5hours to do the work!.

The mizansyou dressing goes well with seafood.

Firefly squid '蛍烏賊' is beautiful because luminous organ of the body emits light .

I put kimisu dressing '黄身酢' on a salad,as it's a spring-colored dressing.

York is used for'黄身酢' .

We enjoy edible wild plants in spring.

Today's ingredients is flower shoots of buttebur'fukinotou'.

I feel spring in the aroma of fukinotou .

Lotus root with dry tomatoes cooked in soy sauce,sake and broth of dry tomatoes.

We Japanese enjoy cherry blossom viewing when cherry blossoms bloom.

Today's sweets is Ichigo-daifku.

Ichigo-daifku is a confectionary consisting of a strawberry inside 'daifuku' which is a rice cake stuffed with sweet bean paste.

Udon-noodles and Onigiri.

There is a variety of Onigiri filings and flavors .

Filings are Sakura Shrimp,Wakame,Greens,Cheese,Uncured ham .

Winter,it is the season when Root vegetables are delicious.

Today's dish,Taro au gratin.

For vegetarian,I change fresh cream into soy milk,cheese into olive oil.

In Japanese cuisine,we use dried foods well.

Today's dish,Dried persimmon with sweet tofu sauce.

The other ingredients are white miso and sesame.
